Baked Oatmeal

...basically cake for breakfast!

As many of you know, I eat oatmeal pretty much every day because it's so delicious, satisfying, and nutritious. Recently, regular oatmeal has left the spotlight and has been replaced by baked oatmeal.


Basically, you blend your oatmeal in a blender and bake it instead of cooking it on the stove or in the microwave. I finally hopped on this trend and BOY am I glad I did. I'll definitely be baking my oatmeal again in the future ;)


Ingredients:

2/3 C oats, blended into flour

1/2 scoop collagen peptides

Pinch of salt

Cinnamon

1/4 tsp baking powder

1 egg

2 TBSP pumpkin puree

2 TBSP unsweetened almond milk

1 tsp maple syrup


Optional Mix-Ins:

Fresh berries, frozen berries, raisins, craisins, chocolate chips, nuts, seeds...etc.


Method:

  1. Preheat oven to 350 F and grease a small, oven-safe dish, such as a glass pyrex container or ceramic ramekin.

  2. Whisk all the dry ingredients (oats through baking powder) in a small bowl.

  3. Add wet ingredients and mix until combined.

  4. Pour into the greased dish and bake for 18-22 minutes or until cooked through.

  5. Enjoy topped with nut butter, fruit, maple syrup, chocolate chips, or anything else your heart desires!
